A secret trick about pressing
« From the vineyard to the winery, high care is taken to preserve the grapes intact. As the dark-skinned grapes (Pinot Noir and Meunier) require to be carefully pressed so as to leach as little color as possible from the skins, I invested in state-of-the-art equipment such as a pneumatic pressing machine, with elastic membranes. This process allows me to keep the wines’ analytical and organoleptic properties intact. But waiting for the magic to happen, musts – pressed on a cru-by-cru basis and a plot-by-plot basis – are stored in thermo-regulated stainless steel vats to keep neutral base wines. ».
